  • whitePrepare the noodles: Boil the chow mein noodles according to the package instructions. Once cooked, drain and rinse with cold water to stop the cooking process. Toss with a little oil to prevent sticking sesame seeds - to garnish on top.

  • Stir-fry the vegetables-Heat oil in a large pan or wok over medium-high heat. Add garlic and ginger and stir-fry for about 30 seconds until fragrant.
  • Add the vegetables: Add the onion, carrot, bell pepper, cabbage, and mushrooms. Stir-fry for 3-4 minutes, keeping the veggies slightly crunchy.
  • Add the noodles: Add the cooked noodles to the pan with the veggies.
  • Sauce it up: Mix soy sauce, hoisin sauce, chili sauce, sesame oil, sugar, salt, and pepper in a small bowl. Pour the sauce over the noodles and vegetables. Toss everything together until the noodles are evenly coated and heated through.
  • Garnish: Sprinkle with chopped spring onions and sesame seeds if desired.
  • Serve: Serve hot and enjoy your delicious vegetarian chow mein!
  • This dish can be customized with your favorite veggies or tofu for added protein.
