VEGETARIAN CHOW MEIN
Better than takeout, quick and easy stir-fried vegetarian chow mein is packed with vegetables and coated in a delicious savoury sauce. This flavourful and delicious vegan recipe is completely customizable and takes just 15 minutes to make. Weeknight dinner has never been easier!
- vegetable oil - for stir-frying.
- mushrooms - you can add in any vegetables that you like. Some other vegetables I add often are carrots, red peppers, and broccoli.
- garlic
- chow mein noodles
- soy sauce
- sugar

- water (if needed

- sesame oil
- whitePrepare the noodles: Boil the chow mein noodles according to the package instructions. Once cooked, drain and rinse with cold water to stop the cooking process. Toss with a little oil to prevent sticking sesame seeds - to garnish on top.
- Stir-fry the vegetables-Heat oil in a large pan or wok over medium-high heat. Add garlic and ginger and stir-fry for about 30 seconds until fragrant.
- Add the vegetables: Add the onion, carrot, bell pepper, cabbage, and mushrooms. Stir-fry for 3-4 minutes, keeping the veggies slightly crunchy.
- Add the noodles: Add the cooked noodles to the pan with the veggies.
- Sauce it up: Mix soy sauce, hoisin sauce, chili sauce, sesame oil, sugar, salt, and pepper in a small bowl. Pour the sauce over the noodles and vegetables. Toss everything together until the noodles are evenly coated and heated through.
- Garnish: Sprinkle with chopped spring onions and sesame seeds if desired.
- Serve: Serve hot and enjoy your delicious vegetarian chow mein!
- This dish can be customized with your favorite veggies or tofu for added protein.
